What’s your synopsis in the book of your life so far?
All I can say is that it has been jam packed with huge highs, big lows, colour, love and romance with some scary scrapes and outstanding comical moments in between –my close friends and family say it would make a fucking incredible book or movie. Forget the new cookbook, I need to write my memoirs!
What is it about Ibiza?
I don’t want to sound clichéd, but the first time I came to Ibiza it was love at first sight. It was so familiar to the childhood Spain that I adored but it had something more – an indescribable magic. It has not all been plain sailing – they say Ibiza is a scorpion island with a sting in her tail, so you do have to expect challenges along the way. Everything seems so amplified here, the taste of the produce, its rugged beauty, the stars, the moon, the sun, and yes, after a while you do get the hippie connection.
You can’t cook any more. What do you do?
Far too dramatic to say I would kill myself – but I would massively struggle if I couldn’t cook. I think I would have to find an alternative creative outlet where I would experiment with colour, texture, nature and feel some kind of life force. Perhaps painting, interior design or gardening.
What is the best part of your day?
So hard to choose. Perhaps when my I cook for my husband and he leaves an empty plate before flopping back with the most satisfied look of pleasure!
Do you believe in luck? How so?
I believe we have the ability to make our own luck by attracting it from the universe. Call it manifestation if you like – but I’ve certainly had some ridiculously big life experiences that some people would call fortuitous. But I truly believe my lucky stars were aligned at those times.
When was the last time you REALLY got angry?
I flipped out completely when I saw footage of beautiful dogs being barbarically tortured and slaughtered at the annual Yolin dog meat festival. My blood boils as I write this. I have signed countless petitions to try and put a stop to it. And although I despise seeing the images at least it is bringing awareness – we can only hope it will end one day soon.
Invent a new pizza topping – what is it?
I am a huge fan of fresh Ibiza spirulina – it is probably one of the healthiest food sources on the planet (the proper fresh stuff tastes nothing like powdered spirulina that can turn a smoothie into pond water). I would make a beautiful fresh basil pesto with spirulina and hemp (I have made this recipe before and it’s unbelievable!) This would go on a classic margarita (thin and stone baked) with sun blush tomatoes, buratta, a cracking old Parmesan and a good glug of chilli oil. I’m dribbling!
